Recipe File: EZPZ Bird Stuffing

I don’t usually stuff my birds (that’s what she said…wait…what?) but when I do I’ve come up with a super simple, yet tasty stuffing that adds quite a bit to the flavor but doesn’t take forever to make. This takes just seconds and is good for turkey, chicken, or even pheasant or a duck. (Watch out with the duck though because as the fat in the duck renders it creates a stuffing texture like that of the type of food people eat when they have their jaw wired shut)

Ingredients:

1 package New York Style Bagel Crisps (Sea Salt flavor)
1/4 cup dry white cooking wine
1 table spoon Italian seasoning
1 garlic clove, crushed or minced fine
1/4 cup water (optional)

You can substitute Melba toast for bagel crisps but I find the bagel crisps have an absolutely outstanding texture once they soak up the fat of the bird. Much better than just regular bread crumbs.

Depending on the bird or how many leftovers you want really guides the volume of the liquids you want to add. When I cook chicken it’s almost exclusively Rock Cornish Game Hen because its cheap, easy to cook, and yields an incredibly juicy breast (that’s what she said…wait…what?) So these instructions are for stuffing a pheasant or game hen.

For a turkey or duck you want to use substantially more so I would say triple the ingredients, but again watch out with the duck.

Take 10-12 bagel crisps from the package and crush them in a bowl with your hands. Add in the white cooking wine and knead the mixture with your hands until you have a moist mixture that still has "chunks" about it. Drop in the Italian seasoning and garlic and mix into the stuffing. If you find things are getting too dry (meaning there still is too much "crunch"), you can add water a bit at a time, but not too much! Stuffing that is too wet going into the bird tends to be too mushy once the roasting is done. Ideally you want something to soak up the tasty bird stock and fat. So ideally we want something very spongy and a little springy to the touch, not pasty and sticky like dough. So you have to walk a fine line with adding moisture and mixing the ingredients. If its too wet, add more bagel crisps.

Now take the cornish hen or pheasant and lay it out on some foil. Next, you gotta stuff that bird! (That’s what she said. yeah I think I got it that time) Just pack the fluffy stuffing into the bird. Don’t worry about tying the legs, the trick with putting it on foil is to wrap it all around the bird such that the legs come together and are bound by the foil to keep the chest cavity closed)

Now roast the bird as normal.

Cornish hens and most Pheasants serve two or so, so the stuffing is just a nice compliment to go with rice or another side dish.

This recipe is designed for times when you want stuffing but want to make it yourself and not go with some over the top spice rich thing like stove top. Nothing against Stove Top or other brand stuffings, but they are a side unto themselves. Real stuffing takes its flavor and character from the juice of the bird.

I am typing this from OSX on an iMac

Got the home office redesigned and got the entire network back up. In addition I now have a new 24" iMac with the NVIDIA 8800GS card with a Viewsonic 24" secondary monitor up and running. OSX seems to handle my blogging software just fine and now I shall bootcamp Windows Vista!

[EDIT Installing Vista x64 on the iMac has become a horrible experience. Not because of Vista, but because Apple’s Bootcamp, the software that allows the install of Windows, refuses to support 64 bit Windows Vista on the iMac, despite the 64 bit processor on the iMac. When I call Apple support trying to get it to work, I was told A) the x64 version of Vista is well known in the industry to be unstable (which seriously made me lol, its by far the most stable version of Windows ever) and B) Microsoft itself refuses to support x64 Windows Vista on any hardware (um hello, I WORK THERE, I HELPED MAKE IT, I KNOW IT’S SUPPORTED)

What a horrible experience. All I hear from people is how great Windows runs on a Mac and my experience has been the exact opposite for the past 3 hours. Very, VERY disappointing. Going to bed now, maybe I will get it to work tomorrow. But I refuse to go back to 32 bit after running 64 bit Vista on all my machines for a year and a half now. I’ll return the iMac before I run 32 bit on it.]

New Year!

I spent a quiet new years at home last night with friends watching the fireworks show from the Space Needle on TV.  Looks incredible and hope to actually just go on down there for the night next year.
If its not snowing.
 
Which brings me to snow.  Seattle is much like Dallas in its winter.  The temperatures rarely dip below 35 for extended periods and it’s the rainy season.  However since I live in Duvall, I live on top of a ridge.  The ridge itself isn’t all that incredibly high, I believe my GPS notes I’m 250 feet above sea level, roughly 250 feet above the Snoqualmie River Valley.  Apparently that 250 feet makes all the difference in the world when you are talking about snow.  If Seattle proper is forecast for an inch, we’ll easily get 3. If you just drive down the ridge to the main road, there’s no snow at all, just rain. While the winter wonderland aspect is great, and my dogs think this is what heaven must be like, it can get tiresome when you want to get out into the city.
 
DON’T get SSX3 for the Game Boy Advanced.  Stupid me, I thought maybe they’d just change up the game a bit to be top down or side scroller given the GBA’s weaknesses at 3D.  Nope.  They tried to implement a third person 3D view.  The result is absolutely awful.  One of the most unplayable games I’ve ever seen.  Advance Wars 2 is back in the GBA after that little misadventure.
